Ingredients
  

  • 2 chicken breasts marinated in lemon juice, garlic, and olive oil
  • 1 cup quinoa
  • 1 cucumber diced
  • 1 tomato chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Grill the marinated chicken until fully cooked.
  • Cook the quinoa according to package instructions.
  • Combine quinoa, cucumber, and tomato in a bowl.
  • Drizzle with olive oil and lemon juice, and season with salt and pepper.
  • Serve with the grilled chicken on top.
