5-Ingredient Vegan Chickpea Curry

Ingredients
  

  • 1 can of chickpeas drained and rinsed
  • 1 can of coconut milk
  • 2 tablespoons red curry paste
  • 1 cup chopped spinach or kale
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Add the red curry paste and stir for 1 minute.
  • Pour in the coconut milk and mix well.
  • Add chickpeas and let it simmer for 10 minutes.
  • Stir in the spinach or kale and cook for 2-3 more minutes.
