- 1 can of chickpeas drained and rinsed
- 1 can of coconut milk
- 2 tablespoons red curry paste
- 1 cup chopped spinach or kale
- 1 tablespoon olive oil
Heat olive oil in a pan over medium heat.
Add the red curry paste and stir for 1 minute.
Pour in the coconut milk and mix well.
Add chickpeas and let it simmer for 10 minutes.
Stir in the spinach or kale and cook for 2-3 more minutes.
